Most of the farms in this area are dedicated to raising sheep. More than one million Lacaune sheep, the dairy breed par excellence, produce Roquefort or Lacaune sheep cheese. With their long drooping ears, their ample tail and especially a strong body, we meet the Lacaune ewes in the Tarn, the Aveyron and the neighboring departments, but also in Corsica and in the Pyrenees.
